Longjing is a famous Chinese green tea from Zhejiang Province, in this case produced in Xinchang County, Shaoxing County (绍兴县, shàoxīng xiàn).
Xinchang Xian (新昌县, xīnchāng xiàn) is located south of the metropolis of Hangzhou (杭州市, hángzhōu shì) and is warmer, so the harvest is earlier. To produce Longjing tea, the shoot tips are picked by hand, and the subsequent drying of the tea leaves in woks is also typically done by hand.
In the birthplace of Dragon Well green tea (龙井绿茶, lóngjǐng lǜchá) in Zhejiang Province (浙江省, zhèjiāng shěng), it is brewed in glass cups, without a gaiwan or chahai. Local teapots explain this tradition by saying they love to watch the fresh, bright green tea leaves dance beautifully in a clear glass of water, gradually infusing the tea infusion with a delicate green color. The flavor of fresh Longjing reveals notes of pumpkin seeds, tender smoked fish, and hot pastries.
