Jun Shan Yin Zhen is one of the rarest and most expensive regional varieties of Chinese tea. It grows exclusively in the Hunan province. The Jun Shan Mountains ("Ruler Mountains") are located on a small island of only 1 square kilometer in the middle of Lake Dongtinghu. This tea variety was awarded the status of imperial tea back in the Song Dynasty (960-1279) and since then about nine kilograms of this tea have been delivered to the court of the Chinese emperor every year.
Jun Shan Yin Zhen is harvested exclusively by hand, with only the highest quality buds being collected, which must meet strict selection criteria. They must be of a certain size, shape and colour. After harvesting, the buds undergo a special treatment, which includes the Yellow Steeping stage. During this process, the buds and tea leaves are kept in a warm, humid environment with limited oxygen for several days.
Jun Shan Yin Zhen has a rich and complex aroma, which includes floral, pine, smoked and sweet notes. The taste of the tea is also multifaceted: it is oily, clean and transparent, with spicy shades gradually revealing themselves. As the taste reveals, baked, resinous, pine notes are added. The aftertaste is long, with echoes of dried herbs.
This type of tea requires a special approach when brewing. The water should be soft and purified, and the temperature should be in the range of 70 to 80 degrees Celsius. The steeping time is from 10-15 seconds, which increases with each new infusion. Withstands more than 5 infusions.
Jun Shan Yin Zhen is a true masterpiece among Chinese teas. Its taste and aroma are incomparable to anything else, and the brewing process turns into a real art. If you want to try this unique drink, be prepared for the fact that it will cost you a considerable amount of money, because Jun Shan Yin Zhen is considered one of the most expensive teas in the world.

Due to the fact that this variety was hidden from foreigners for a long time, it is little known outside of China. It has only a few types: there is bud tea - Jun Shan Yin Zhen (Silver Needles from Mount Jun Shan), Yin Zhen (Silver Needles), Mei Ding Huang Ya, as well as leaf tea, which is divided into "small" and "large tea leaves" - Huo Shan Huang Ya, Bei Gan Mao Jian.
