Jun Shan Yin Zhen is one of the rarest and most expensive regional varieties of Chinese tea. It grows exclusively in Hunan Province. The Jun Shan Mountains ("Ruler's Mountains") are located on a small island measuring just 1 square kilometer in the middle of Lake Dongting. This tea variety was awarded imperial status back in the Song Dynasty (960-1279), and since then, approximately nine kilograms of it were supplied to the Chinese imperial court annually.
Jun Shan Yin Zhen is harvested exclusively by hand. Only the highest-quality buds are selected, and they must meet strict selection criteria. They must be of a specific size, shape, and color. After harvesting, the buds undergo a special processing process, which includes the "Yellow Steeping" stage. During this process, the buds and tea leaves are kept in a warm, humid environment with limited oxygen for several days.
Jun Shan Yin Zhen has a rich and complex aroma, featuring floral, pine, smoky, and sweet notes. The tea's flavor is also multifaceted: oily, clean, and transparent, with gradually developing spicy undertones. As the flavor develops, baked, resinous, and pine notes emerge. The finish is long, with hints of dried herbs.
This tea variety requires a special approach when brewing. The water should be soft and purified, and the temperature should be between 70 and 80 degrees Celsius. Steeping time is 10-15 seconds, increasing with each infusion. It can withstand more than 5 infusions.
Jun Shan Yin Zhen is a true masterpiece among Chinese teas. Its taste and aroma are incomparable, and the brewing process is a true art. If you want to try this unique beverage, be prepared to pay a hefty price, as Jun Shan Yin Zhen is considered one of the most expensive teas in the world.

Due to the fact that this variety was hidden from foreigners for a long time, it is little known outside of China. It has only a few types: there is bud tea - Jun Shan Yin Zhen (Silver Needles from Mount Jun Shan), Yin Zhen (Silver Needles), Mei Ding Huang Ya, as well as leaf tea, which is divided into "small" and "large tea leaves" - Huo Shan Huang Ya, Bei Gan Mao Jian.
