Sochi has always been famous for its tea plantations, perhaps the northernmost in the world, but few people know about such a unique product as Sochi yellow tea.
Sochi yellow tea is a semi-fermented tea that occupies a cross between green and turquoise teas. Grown in the Sochi Nature Biosphere Reserve, it possesses unique properties and flavors that distinguish it from other teas. The tea is harvested in early spring, and unlike Chinese yellow teas, the young leaves that have just emerged from the buds are used, not the buds. In appearance, it resembles large-leaf white Chinese teas more than yellow Chinese teas.
The main characteristic of Sochi yellow tea is its flavor. It has a sweet, soft taste with hints of baked milk and autumn leaves. Notes of baked milk and chestnut can be discerned, lending it a special depth and sophistication. The taste is sweet, soft, and velvety, without bitterness or astringency, rich yet delicate and soft, with light floral notes. Due to the fact that this variety was hidden from foreigners for a long time, it is little known outside of China. It has only a few types: there is bud tea - Jun Shan Yin Zhen (Silver Needles from Mount Jun Shan), Yin Zhen (Silver Needles), Mei Ding Huang Ya, as well as leaf tea, which is divided into "small" and "large tea leaves" - Huo Shan Huang Ya, Bei Gan Mao Jian.
