Anji Bai Cha , or "White Tea from Anji County," captivates with its delicate flavor and captivating aroma from the very first sip. Despite its name, which categorizes it as a white tea, this variety is actually a green tea, harvested in early spring in an ecologically pristine region of Zhejiang Province, China.
Anji Bai Cha differs from other teas due to its unusual appearance. Its leaves are pale green, almost white. This is because the young leaves of this tea contain very little chlorophyll. This is due to the unique climate of Anji County. Winters are quite cold, and summers are warm, but not hot. Furthermore, this region receives little direct ultraviolet rays.
The history of Anji Bai Cha dates back to the Song Dynasty (960-1279), when this tea was already prized as an imperial beverage. The region's unique climate, abundant fog, and mild winters create an ideal environment for growing Bai Ye tea bushes, from whose tender buds and young leaves this tea is made.
Anji Bai Cha is hand-picked in early spring, when the tea buds have not yet opened and the leaves are still pubescent. The harvested leaves undergo minimal processing: they are sun-dried and then dried in special ovens.
Aroma: Delicate, sweetish, with floral and pine notes.
