Gaba Alishan tea is named after the Ali Mountains, located in Chiayi County, Taiwan. It is there that the raw materials for this exquisite oolong tea are harvested. It is produced using the unique Gaba technology, invented by Japanese professor Tohiro Tsushida.
GABA is one of the youngest types of tea. It was first produced in 1987 in Japan. The GABA process was then introduced and perfected in Taiwan. Today, the drink is produced in China, in tea provinces that specialize in oolong tea.
The production of Alishan Gaba is strictly controlled by the Da Yu Ling Tea Breeding and Research Station. The tea is hand-picked and processed. No fertilizers or supplements are used to enhance the tea bush's productivity.
Leaf harvesting takes place in an ecologically clean protected area almost year-round. Varieties harvested in the winter (October to December) and spring (March to May) seasons are especially popular.
The harvested raw materials are dried in the sun for some time. Then comes the GABA process—an oxygen-free fermentation process in which the leaves are exposed to nitrogen for at least 10 hours. This preserves all the beneficial substances contained in the oolong tea. Most importantly, the tea produces the maximum amount of gamma-aminobutyric acid (GABA), which is extracted into the tea infusion even during standard brewing.
By replenishing gamma-aminobutyric acid (GABA), GABA Alishan has a positive effect on the entire body. Moreover, regular consumption stimulates brain activity, improves mental acuity, and enhances psychological well-being. It's no coincidence that Taiwanese businessmen and officials drink this beverage during business negotiations to enhance concentration, clarity of thought, and calm.
Taiwanese GABA tea is a unique tea variety that has been rapidly gaining popularity in recent years.
When dry, the aroma is warm, sweet and sour, with prominent notes of fine red tea and dried citrus fruits. After washing, the aroma is bright and dense, with notes of citrusy baked fruits and fresh berries.
The flavor of GABA tea is light, rich, and sweet and sour, with a pleasant honey-floral undertone and a hint of candied orange. After the third steep, notes of pumpkin seeds emerge, interspersed with subtle woody undertones and a slight tartness.
The aftertaste is full-bodied and sweet, with hints of pumpkin seeds and honey. It will linger in the memory of this oolong.
The tea can withstand up to 8 steepings. To brew, use 5-7 grams of tea per gaiwan, or 150-200 ml clay teapot, and water at 90-95°C.
The infusion is clean and transparent, amber in color with a lemon tint.
