Alishan Oolong: Taiwan's Emerald Pearl
Alishan Oolong is one of the most famous Taiwanese oolongs, named after the Alishan Mountains where it is grown. This tea is prized worldwide for its unique flavor and aroma, as well as its beneficial effects on the body.
Alishan is one of Taiwan's most famous oolongs, grown in the Ali Mountains of Chiayi County. These mountains offer an exceptionally picturesque setting with beautiful waterfalls, exotic nature reserves, and the famous forest railway. The tea plantations are located at an altitude of 2,700 meters in rugged terrain with unique soil and a variable climate. Tea grown in these conditions is highly prized for its unique flavor and aroma. Harvested year-round, the winter and spring harvests are considered the most delicious. Only the first three leaves are used for production. Then, after a drying process at 250-300°C, fermentation begins. Because only the leaf edges are intensively processed, without damaging the structure of the main leaf, Alishan oolong is free of bitterness and all its beneficial properties are fully preserved.
The history of Alishan tea dates back approximately 400 years. According to Chinese legends and folklore, it was during this period that it first appeared in the tea ceremonies of Chinese mandarins, harvested on the mountain of the same name on the island of Taiwan. It was served only to high-ranking guests of honor. Gradually, the fame of Alishan tea spread to the wealthy countries of Saudi Arabia, India, and Western Asia, where it remains very popular. Later, this aristocratic oolong tea was brought to the British royal palace and became a staple at tea parties. Its indescribable flavor, combining the nuances of red and green tea, is still appreciated by today's gourmets.
Features of cultivation and production
- High-altitude cultivation: Alishan tea plantations are located at an altitude of 1,500-2,600 meters above sea level. The mountain climate, with large daily temperature fluctuations and abundant rainfall, creates ideal conditions for growing tea bushes.
- Tea tree variety: The primary variety used to produce Alishan oolong is Chin Shin (green-heart oolong). This variety possesses unique characteristics that are imparted to the tea.
- Harvesting and Processing: Tea leaves are hand-picked several times a year. Alishan Oolong processing includes withering, rolling, fermentation, and drying. Light fermentation (around 25%) gives the tea its characteristic golden-green color and floral aroma.
Taste and aroma

Varieties of Alishan Oolong
There are several varieties of Alishan oolong tea, each differing in harvest time and flavor characteristics. For example:
- Spring Alishan: Fresh, floral aroma, soft taste.
- Autumn Alishan: Richer flavor with nutty undertones.
The aroma of the dried leaves is fresh and subtle, with a vibrant hint of freshly shelled pumpkin seeds and a hint of summer wildflowers in the background. In a heated porcelain gaiwan, the tea exudes the aroma of sweet, cooked corn kernels.
From the first to the fourth steep, the taste is fresh, light, and rich, with hints of pumpkin seeds at the end of the sip and mown grass at the beginning. By the seventh steep, the mown grass flavor reaches its peak. The aftertaste is refreshing and slightly sweet, with hints of blossoming flowers and unshelled pumpkin seeds.
