Sochi red tea Shaikhun (sun-dried)
Shaikhong is a sun-dried red tea. Sun-drying (shaigan) has now been replaced by kiln-dried (hunggan).
The aroma of the dry leaf is recognizable as dried apple and cinnamon. In a heated dish, the sweetness of the baked goods comes out and the spiciness intensifies. The taste of the infusion is very delicate, slightly viscous, reminiscent of baked goods with apple jam and sorrel.
