Wuyi Shuixian from the top of Sanyangfeng

Origin: Sanyangfeng Peak (Chinese: 三仰峰, pinyin sānyǎngfēng), Wuyi Mountain (Chinese: 武夷山, pinyin wǔyíshān), Fujian Province (Chinese: 福建, pinyin fújiàn), China.
Production: manual labor of tea master Wu Yun Peng (Chinese: 吴永鹏, pinyin wú yǒng péng).
Shuixian is a natural cultivar of the tea plant native to Jianou County (Chinese: 建瓯市, pinyin: jiànōushì) in northern Fujian. It is believed to have been developed by Han farmers. The cultivar received support for cultivation during the reign of the Qing Emperor Kangxi (1662–1722).
The Shuixian presented here is not a mass-produced product. Only 50 kilograms are produced per year, and the raw materials are collected from bushes located on the top of Sanyangfeng (Chinese: 三仰峰, pinyin: sānyǎngfēng) in the Wuyi Mountain Nature Reserve.
The processing of leaves consists of the following technological stages, which require great skill: xianye - fresh leaves/leaf picking (Chinese: 鲜叶, pinyin: xiānyè), weidiao - withering (萎凋, wěidiāo), zuoqing - shaking and stirring (做青, zuòqīng), chaoqing - roasting (炒青, chǎoqīng), rounyan - twisting (揉捻, róuniǎn), chuhong - initial drying (初烘, chūhōng), baoróu - wrapped kneading (包揉, bāoróu), fuhong - repeated drying (复烘, fùhōng), fubaoróu - repeated wrapping and kneading (复包揉, fùbāoróu), wenhuo honggan — drying over low heat (文火烘干, wénhuǒ hōnggān), tanliang — cooling (摊凉, tānliáng), jianti — sorting (拣剔, jiǎn tī), chengping — finished product (成品, chéngpǐn). The art of tea making (in the broad sense gongfu, 功夫, gōngfu) lies in optimally performing all of these processes without any regulations.
Appearance, aroma and taste
Consists of large, matte-brown leaves. It is recommended to boil the water and let it cool slightly to 90-95 ºC before brewing. The tea has a floral aroma, possibly with hints of baking. The taste is soft and smooth, with a bright "baked" note. Leaves a long-lasting aftertaste.
