Bairui Xiang (Chinese: 白瑞香, pinyin: Bái Ruì Xiāng), or White Daphne , is a highly prized oolong tea from Wuyi Mountain, classified as one of the "Ten Famous Teas of Wuyi Mountain." It is known for its unique aroma and rich flavor. White Daphne originates from the Hui Yuan Keng (Chinese: 慧苑坑, pinyin: Huìyuàn kēng) rocky area in the Wuyi Mountains of Fujian Province, China. This variety is believed to have been bred over 100 years ago.
Taste and aroma:
Aroma: White Daphne is renowned for its intense, sweet aroma, reminiscent of the blooming daphne, with notes of honey, orchid, fruit and spice.
Taste: The infusion has a golden-amber color, a soft (Chinese: 醇厚, pinyin: chún hòu) taste, that is, full, rich, balanced, with fruity, floral and honey notes.
Aftertaste: Long, sweet, with hints of the "rock flavor" (yang yun) characteristic of Wuyi Mountain oolongs.

- Water temperature: 85-90°C
