Jin Jun Mei: Treasure from the Wuyi Mountains
Jin Jun Mei (Chinese: 金骏眉, pinyin: Jīn Jùn Méi) means "Golden Eyebrows" in Chinese. Ting Tong Mei is one of the most refined and prized varieties of black tea, native to the Wuyi Mountains in Fujian Province, China. In southeastern China, this tea is known as Ting Tong Mei in the local dialect. It gets its name from the golden, fur-like hairs on the tea buds.
Jin Jun Mei is a relatively new tea variety, first developed in the late 20th century. However, in a short time, it has earned the recognition of tea connoisseurs worldwide and become a symbol of Chinese tea culture. Its creation stemmed from the desire to create a new, unique tea variety that would combine tradition and innovation.
Production and features
Jin Jun Mei is produced using only young tea buds, picked in early spring. Each bud is processed by hand, making this tea especially valuable. Harvesting takes place in early spring. The harvest is achieved through slow and painstaking work. Only buds from wild tea bushes, which grow in the mountainous and highland areas of Wuyi Mountain near the village of Tongmu, are used. These bushes also provide the raw material (the fourth and fifth leaves) for Zhen Shan Xiao Zhong, a tea so beloved by Europeans.
Key Features of Jin Jun Mei :
- Taste: Soft, slightly sweet, with honey and fruity notes. The aftertaste is long and pleasant.
- Aroma: Rich, complex, with subtle floral and fruity notes.
- Colour of infusion: Amber-golden, transparent.
- Appearance: Dry tea buds have golden hairs, which gives the tea an exquisite appearance.
Jin Jun Mei has numerous health benefits: it protects the body's cells from damage, stimulates the immune system, and promotes normal gastrointestinal function. Due to its high content of tea buds, it has a strong invigorating effect and increases productivity.
How to brew Jin Jun Mei
To reveal the full aroma and flavor of this tea, it is recommended to use the following recommendations:
- Water temperature: 95-100°C.
- Brewing time: First brew – 30 seconds, subsequent brews – 10-15 seconds longer.
- Amount of tea: 3-5 grams per 150 ml of water.
- Utensils: It is best to use a transparent teapot made of glass or porcelain.
Jin Jun Mei is a true treasure that will give you an unforgettable taste experience and help you relax after a long day.
The aroma of dry tea leaves has spicy, woody notes; in a heated teapot, sour notes appear.
It holds up to 9-10 steeps. The finished tea has a vibrant, woody, and dried-fruity bouquet. The flavor is juicy, slightly astringent, with a sweet-sour berry note predominating in all steeps. The aftertaste is plummy and velvety. The most suitable teaware for this tea is a thick-walled gaiwan or a porous clay teapot. "Golden Eyebrows" is a ceremonial variety. It has a meditative, calming, and mood-lifting effect.
