Tea Interview: White Tea
In 2015, we interviewed Zhou Xiaolin (周小莉, zhōu xiǎolì) and the materials were shelved. It happens. Xiaolin is a smart married woman who has been working productively with Russians in China for a long time and is already studying Russian herself. The Zhou family has been producing white tea (白茶, báichá) for over half a century. Their white tea factory is located in Fujian Province (福建省, fújiàn shěng) in the small city of Hulin (湖林, húlín), Fuding County (福鼎市, fúdǐng shì). In the interview, Alexander Polyakov talks about the history of baicha and láo baicha (老白茶, lǎo báichá), the varieties that exist today, production and pressing, and the benefits for humans.
