In terms of its personal and aromatic characteristics, yellow tea has no equal. It is characterized by a soft, barely perceptible aroma and a slightly perceptible astringency.
Red tea is a tea that occupies a middle position between unfermented green tea and fermented black tea, combining the flattering properties of these two teas. It is made from ripe leaves of large tea bushes, which after picking are withered and dried under the scorching sun.
Black tea is made from large leaves of mature tea bushes, which are withered and dried for two to four weeks. In this way, the tea leaves undergo complete oxidation, and the tea becomes completely fermented.
Green tea is good tea
Until recently, green tea was considered a rather exotic drink in Russia, and good tea was even more of a rarity. People accustomed to black traditional tea found the shade and smell of exotic green tea strange and incomprehensible. Green tea, unlike black tea, does not tolerate fermentation, and therefore has a slightly light color of the brew. Because of this, it has a rather subtle smell and astringent taste. In the past, it was impossible to get Chinese tea in retail outlets. Times have passed, and people's attitudes to this magical drink have changed for the better. Today, we are not surprised by the question of which tea to drink: green or black. In every bar and restaurant, green tea is necessarily on the tea menu. In fashionable and chic drinking establishments, where the assortment of green tea is quite large, it is difficult to refuse an offer to drink some elite tea. - Tightly twisted along the longitudinal axis, they resemble long, spirally twisted sticks.
Twisting tea significantly extends the periods of preservation of the brew without changing its taste and aromatic qualities. The more the tea leaf is twisted, the more extractive substances are preserved in it, respectively, these teas are more saturated, strong and viscous.
To stabilize the aromas and healing substances of the tea, after rolling it undergoes a final drying, as a result of which it acquires a natural green color.
Green teas are often flavored, which helps improve their taste. The main flavoring is jasmine flowers, which are mixed into the tea raw materials during the final drying process. The tea absorbs the aromas of this wonderful flower to the maximum, after which the jasmine petals are thrown out.
The tea ceremony of brewing healthy green tea is very different from the preparation of regular black teas. It is brewed in a porcelain or ceramic teapot at a water temperature of no higher than 90°C, and it is desirable to use softened water. It stands for 1-3 minutes depending on the type of tea and is served. It is not recommended to brew green tea for a longer time, because of the caffeine in it, it becomes bitter in taste.
